For the crust
  • 1.5 cups graham cracker crumbs Use gluten-free options if needed.
  • cup granulated sugar
  • ½ cup unsalted butter, melted
For the filling
  • 8 oz cream cheese, softened Use full-fat for best results.
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 2 lemon zest of lemons Zest right before use for best flavor.
  • ¼ cup fresh lemon juice Use fresh lemons rather than bottled.
  • powdered sugar for dusting

Preparation
  1. Start by mixing the graham cracker crumbs, sugar, and melted butter in a bowl until combined. Press the mixture firmly into a lined baking pan.
  2. In another bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs, all-purpose flour, lemon zest, and fresh lemon juice and mix until well combined.
Baking
  1. Pour the filling over the crust and bake at 350°F (175°C) for 25–30 minutes, or until the edges are set but the center has a slight jiggle.
  2. Once cooled, dust the bars with powdered sugar and garnish with additional lemon zest before slicing into squares.

Notes

Chill the bars for at least two hours before cutting; this helps them hold their shape better. Using parchment paper in your pan allows for easier removal and cutting.
