Filling ingredients
  • 2 cups mashed sweet potatoes (about 2 medium yams, roasted or boiled then mashed)
  • 1 cup brown sugar (light or dark)
  • 1/2 cup milk (dairy or unsweetened plant milk) For a richer texture, use evaporated milk.
  • 1/4 cup butter, melted (or coconut oil for dairy-free)
  • 2 large eggs For a vegan option, replace with flax eggs.
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
Crust
  • 1 9-inch pie crust (store-bought or homemade) For gluten-free, use a gluten-free pie crust.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, and melted butter. Stir until smooth and evenly mixed.
  3. Add the eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Whisk or stir until the mixture is homogeneous and slightly glossy.
  4. Pour the filling into the prepared pie crust and smooth the top with a spatula.
Baking
  1. Bake for 45–50 minutes. The edges should be set and the center slightly jiggly but not liquid; a toothpick near the center should come out mostly clean with a few moist crumbs.
  2. Remove the pie from the oven and let it cool on a rack until it reaches room temperature before slicing, about 2 hours.

Notes

This pie can be made vegan by using plant-based milk and butter; replace eggs with ground flaxseed mixed with water. For richer texture, swap regular milk with evaporated milk.
