Preparation
- Preheat your oven to 350°F and line a 9×9-inch baking dish with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined, then press this mixture firmly into the bottom of the lined baking dish.
- In a separate bowl, beat cream cheese, eggs, sugar, vanilla, and salt until the mixture is smooth and creamy. Spread it evenly over the graham cracker crust.
- Top the cream cheese layer with the diced strawberries, distributing them evenly.
- In another bowl, mix flour, brown sugar, salt, and melted butter to create a crumble topping. Sprinkle it over the strawberries.
Baking
- Place the dish in the preheated oven and bake for 35–40 minutes until the filling is set and the edges are golden.
- Cool completely on a wire rack before chilling in the refrigerator for at least an hour.
Notes
Chill the bars for at least 2 hours before cutting for clean edges. Try adding a sprinkle of lemon zest for extra flavor. These bars last up to 5 days in the fridge and can be frozen for up to 3 months.
