Ingredients

  • 1.5 cups graham cracker crumbs You can buy pre-crushed crumbs for convenience.
  • 6 tablespoons unsalted butter (melted) Melted for mixing.

For the filling
  • 2 packages cream cheese (16 ounces total) Use full-fat for the best results.
  • 2 large eggs To help set the filling.
  • 1 teaspoon vanilla extract For flavor.
  • ¼ teaspoon kosher salt Enhances the flavor.
  • ¾ cup all-purpose flour For the filling structure.
For the topping
  • 2 cups freshly diced strawberries Use ripe strawberries for the best flavor.
  • ¼ cup light brown sugar (packed) Adds depth to the crumble.
  • ¼ teaspoon kosher salt For balance.
  • 5 tablespoons unsalted butter (melted) For the crumble topping.

Method
 

Preparation
  1. Preheat your oven to 350°F and line a 9×9-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined, then press this mixture firmly into the bottom of the lined baking dish.
  3. In a separate bowl, beat cream cheese, eggs, sugar, vanilla, and salt until the mixture is smooth and creamy. Spread it evenly over the graham cracker crust.
  4. Top the cream cheese layer with the diced strawberries, distributing them evenly.
  5. In another bowl, mix flour, brown sugar, salt, and melted butter to create a crumble topping. Sprinkle it over the strawberries.
Baking
  1. Place the dish in the preheated oven and bake for 35–40 minutes until the filling is set and the edges are golden.
  2. Cool completely on a wire rack before chilling in the refrigerator for at least an hour.

Notes

Chill the bars for at least 2 hours before cutting for clean edges. Try adding a sprinkle of lemon zest for extra flavor. These bars last up to 5 days in the fridge and can be frozen for up to 3 months.
