Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together granulated sugar, milk, oil, egg, and a splash of vanilla until smooth.
- In another bowl, sift or whisk together all-purpose flour, baking powder, and salt.
- Toss diced strawberries with 2 tablespoons of flour to coat.
Mixing
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Gently fold the floured strawberries into the batter.
Baking
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-55 minutes until a toothpick comes out clean.
Cooling and Glazing
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
- In a bowl, whisk together powdered sugar, melted butter, diced strawberries, and vanilla to make the glaze.
- Spread the glaze over the cooled bread, slice, and serve.
Notes
The loaf can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. Can be served with whipped cream or a mousse for added richness.
