  • 2 cups whipped topping or freshly whipped cream For best texture, use cold heavy cream or high-quality whipped topping.
  • 1 cup yogurt or softened cream cheese Optional for structure, helps stabilize layers.
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons honey or powdered sugar Adjust to taste.
  • 1.5 cups graham cracker crumbs (or vanilla wafer/shortbread crumbs) Finely crushed for a compact layer.
For garnishing (optional)
  • to taste lemon zest Adds freshness.

Preparation
  1. Wash and prep the berries: Rinse under cold water and gently pat dry. Hull and slice strawberries if necessary.
  2. Crush the cookies or crackers into fine crumbs: Place in a zip-top bag and crush or pulse in a food processor.
  3. Make the cream layer: Whip heavy cream, vanilla, and honey/powdered sugar until soft peaks form; or mix yogurt/cream cheese into whipped cream until smooth.
  4. Layer the parfaits: Start with cookie crumbs, followed by cream, and then berries. Repeat until cups are full, finishing with cream and berries.
  5. Chill and garnish before serving: Refrigerate for 30-60 minutes, then add any desired garnishes.

Notes

Best to consume parfaits within 24-48 hours. For optimal texture, avoid soggy layers by pressing crumbs lightly and using the right ratio of cream to yogurt.
