For the Cookie Dough
  • ¾ cup unsalted butter, softened Use high-quality European-style butter for richer taste.
  • 1 cup granulated sugar (plus extra for dusting) Caster/superfine sugar can make the dough cream smoother.
  • 2 large eggs Using extra-large will make the dough slightly wetter.
  • 1 tsp vanilla extract
  • 1 tsp salt
  • cups all-purpose flour If using cake flour, the cookies will be softer.
  • 1 tsp baking powder
  • 1 tsp green food coloring (gel preferred) Liquid dye can affect bake time.
For Decoration
  • 1 cup green chocolate melts (Wilton brand recommended)
  • 1 cup St. Patrick's Day themed sprinkles

Method
 

Preparation
  1. Cream butter and sugar until pale and fluffy.
  2. Add eggs, vanilla, and color until uniform.
  3. Whisk dry ingredients together.
  4. Gradually combine dry and wet until a thick dough forms.
  5. Cover and refrigerate for at least 2 hours.
Baking
  1. Preheat oven to 350°F (175°C) and prepare baking sheet.
  2. Roll or shape the chilled dough and cut shapes.
  3. Bake for exactly 8 minutes; do not brown.
  4. Cool completely on a wire rack.
Decoration
  1. Melt green chocolate melts in 20-second intervals.
  2. Spread chocolate and top with sprinkles immediately.

Notes

Chill dough for clean shapes and avoid overmixing after adding flour to prevent tough cookies.
