Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper. Pro Tip: Leave some overhang for easy removal later.
  2. In a large bowl, mix the unsalted butter, brown sugar, and granulated sugar until smooth. Pro Tip: This mixture should be creamy and light in color.
  3. Gently beat in the eggs and vanilla extract until fully combined. Pro Tip: The mixture should be well-blended without any lumps.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add it to the wet ingredients until just mixed. Pro Tip: Avoid over-mixing to keep the bars soft.
  5. Stir in graham cracker crumbs, chocolate chips, and mini marshmallows until evenly distributed. Pro Tip: You should see bits of marshmallow and chocolate throughout.
Baking
  1. Spread the batter evenly in the prepared pan and bake for 20-25 minutes. Pro Tip: The edges should look set, but the center still slightly jiggles when you remove them from the oven.

Notes

Chill the bars for at least 2 hours before cutting to help them hold their shape. Line your pan with overhang for easy removal. Use a sharp knife wiped clean between each cut for neat edges. Don’t skimp on chocolate chips for that S'mores flavor. Double the recipe for a crowd if necessary. Store in the fridge for up to 5 days or freeze tightly wrapped for longer storage.
