Preparation
- Preheat your oven to 350°F (180°C). Grease a 9×13-inch pan or line it with parchment.
- In a food processor, pulse together the crust ingredients until combined. Reserve 1 1/2 cups for streusel, and press the remainder into the pan.
- Bake the crust for about 15 minutes until lightly browned.
Making the Topping
- Combine the reserved crumb mixture with dark brown sugar. Toss until large clumps form.
Preparing the Filling
- In a bowl, whisk together the filling ingredients. Add the peaches and stir to coat evenly.
Assembly and Baking
- Pour the peach mixture over the hot crust and sprinkle streusel on top.
- Bake for about 45 minutes until bubbly and golden brown. Cool completely and refrigerate for at least 2 hours.
Notes
For best results, chill the butter before use. If peaches are very juicy, sprinkle them with extra flour to prevent sogginess. Use a sharp knife for clean cuts.
