Ingredients
  

For the crust
  • 2.5 cups 2 1/2 cups all-purpose flour Use a spoon-and-level method if measuring by volume.
  • 2/3 cup 2/3 cup granulated sugar
  • 0.5 teaspoon 1/2 teaspoon salt
  • 1.25 cups 1 1/4 cups cold unsalted butter, cut into small cubes Use high-fat butter (82–85%).
For the streusel topping
  • 0.25 cup 1/4 cup brown sugar, preferably dark
For the filling
  • 1 cup 1 cup granulated sugar
  • 0.25 cup 1/4 cup all-purpose flour To help thicken the filling.
  • 0.5 teaspoon 1/2 teaspoon ground cinnamon
  • 0.25 teaspoon 1/4 teaspoon salt For the filling.
  • 5 cups 5 cups pitted, peeled, and chopped peaches (about 7–8 peaches/2.5 pounds) Choose ripe peaches for best flavor.
  • 6 tablespoons 6 tablespoons heavy cream Can substitute with half-and-half for a lighter option.
  • 0.5 teaspoon 1/2 teaspoon vanilla extract (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C). Grease a 9×13-inch pan or line it with parchment.
  2. In a food processor, pulse together the crust ingredients until combined. Reserve 1 1/2 cups for streusel, and press the remainder into the pan.
  3. Bake the crust for about 15 minutes until lightly browned.
Making the Topping
  1. Combine the reserved crumb mixture with dark brown sugar. Toss until large clumps form.
Preparing the Filling
  1. In a bowl, whisk together the filling ingredients. Add the peaches and stir to coat evenly.
Assembly and Baking
  1. Pour the peach mixture over the hot crust and sprinkle streusel on top.
  2. Bake for about 45 minutes until bubbly and golden brown. Cool completely and refrigerate for at least 2 hours.

Notes

For best results, chill the butter before use. If peaches are very juicy, sprinkle them with extra flour to prevent sogginess. Use a sharp knife for clean cuts.
