Ingredients

Base Ingredients
  • 1 box yellow cake mix (about 430–450 g)
  • ½ cup unsalted butter (melted (115 g)) Keep at room temperature for mixing ease.
  • 1 large egg
Filling Ingredients
  • 225 g cream cheese (softened (8 oz)) Opt for full-fat cream cheese for best results.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 ½ cups powdered sugar (about 420 g)
  • ¼ cup unsalted butter (melted (60 g))
  • 1 pinch salt

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
  2. In a bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until a thick dough forms. Press this mixture evenly into the bottom of the prepared pan.
  3. In another bowl, beat the softened cream cheese until smooth. Add the 2 large eggs and vanilla extract, mixing well. Then add the powdered sugar, melted butter, and a pinch of salt. Mix until the mixture is creamy and lump-free.
  4. Pour the cream cheese filling over the crust and spread it evenly.
Baking
  1. Bake for 40–45 minutes. The edges should be lightly golden, while the center will stay soft.
  2. Allow the bars to cool in the pan for at least 1 hour before cutting.

Notes

Chill for at least 2 hours before cutting to avoid warm bars falling apart. For clean edges, use a sharp knife wiped clean between each cut. These bars can be stored in the fridge for up to 5 days or frozen for up to 3 months.
