Base Dough

  • 3/4 cup granulated sugar Adjust amount according to desired sweetness.
  • 3 large eggs Use room temperature for best results.
  • 3 teaspoons vanilla extract Adds flavor to the dough.
  • 3 1/2 cups all-purpose flour Do not substitute with bread or cake flour.
  • 1/2 teaspoon salt Enhances flavor.
  • 2 teaspoons baking powder Helps cookies rise.
  • 2 teaspoons cornstarch Tenderizes the cookies.
  • 1/2 teaspoon baking soda Helps with browning.
Classic Flavor (makes 4 cookies)
  • 3 tablespoons flour Thickens the dough.
  • 100 g semi-sweet chocolate, chopped Use large chunks for melting pockets.
  • 100 g dark chocolate, chopped Adds depth of flavor.
Double Chocolate Flavor (makes 4 cookies)
  • 3 tablespoons cocoa powder Adds chocolate flavor.
  • 1–2 teaspoons milk Loosens the cocoa if needed.
  • 100 g milk chocolate, chopped Provides sweetness.
  • 50 g semi-sweet chocolate, chopped Enhances texture.
  • 50 g dark chocolate, chopped Adds richness.
Red Velvet Flavor (makes 4 cookies)
  • 1 1/2 tablespoons cocoa powder Adds chocolate notes.
  • 2 tablespoons flour Thickens the dough.
  • 1/2–1 teaspoon vinegar Enhances the red velvet flavor.
  • to taste red gel food coloring Adjust to desired color.
  • 100 g white chocolate, chopped For added sweetness.
  • 100 g semi-sweet chocolate, chopped Enhances the flavor.

Method
 

Preparation
  1. Cream butter and sugars until fluffy, about 3–5 minutes.
  2. Add eggs one at a time, mixing after each addition along with vanilla.
  3. Sift together dry ingredients and mix into the wet mixture to form a smooth dough.
  4. Divide the dough into three equal portions.
  5. Prepare each flavored dough according to their ingredients.
  6. Divide each flavored dough into four equal portions and roll into balls.
  7. Chill the dough balls in the refrigerator for 15–20 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Bake the cookies for 14 minutes until pale and slightly underbaked.
  3. Cool completely before serving.

Notes

Store baked cookies in an airtight container for up to 3 days. Freeze shaped dough balls for up to 3 months and bake from frozen.
