Ingredients
  

For the Chocolate Layer
  • 3.9 ounce instant chocolate pudding mix Use a name-brand mix for consistent gelatin strength.
  • 2 cups milk Use cold milk for faster thickening.
For the Green Whipped Layer
  • 3.9 ounce instant vanilla pudding mix Vanilla mix stabilizes the whipped cream.
  • 2 cups heavy cream Look for cream labeled 36%+ fat for best results.
  • 1/2 teaspoon vanilla extract or mint extract Start with less than 1/2 teaspoon of mint.
  • Green food coloring Add drops until desired shade is reached.
For Layering and Garnishing
  • 8 cookies Oreo cookies, crushed Use fresh cookies for best texture.
  • 8 ounces whipped topping You can substitute with whipped topping for a quicker prep.
  • Chocolate gold coins For garnish.

Method
 

Make the Chocolate Pudding
  1. In a medium bowl, whisk 2 cups of cold milk with the instant chocolate pudding mix until smooth. Beat with a hand mixer on low speed for 2 minutes and refrigerate for 5 minutes to let it set slightly.
Whip the Green Vanilla Pudding Base
  1. In a separate bowl, combine the heavy cream with the instant vanilla pudding mix. Beat at low speed, then increase to high until light and fluffy.
Flavor and Color the Whipped Layer
  1. Fold in vanilla or mint extract and add green food coloring until desired shade is achieved.
Layer the Parfaits
  1. Spoon a layer of chilled chocolate pudding in glasses, top with green whipped pudding, and level.
Add Cookie and Whipped Topping Layers
  1. Sprinkle crushed Oreos over the green layer, followed by a layer of whipped topping.
Finish and Garnish
  1. Top each parfait with additional green pudding and a chocolate gold coin. Chill for at least 15 minutes before serving.

Notes
