Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the mashed sweet potatoes, honey or maple syrup, eggs, and applesauce until smooth.
- In another bowl, whisk together the whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Serving
- Slice once fully cooled for best texture.
Notes
Store wrapped in plastic wrap in the refrigerator for 4–5 days. Freeze tightly wrapped for up to 3 months.
