  • 1 cup boiling water Needed to dissolve the gelatin.
  • 1 cup cottage cheese Serves as the creamy backbone; can be blended smooth.
  • 1 cup nondairy dessert topping (like Cool Whip), thawed Lightens and stabilizes the mousse.
  • 1 can (8 oz) crushed pineapple, drained Adds brightness and moisture; drain well.
  • 1 cup fresh strawberries, washed, dried and sliced Adds fresh flavor and texture.
  • 1 cup mini marshmallows Optional, for extra chew and nostalgia.
  • 1/2 cup chopped nuts (sliced almonds, walnuts, or pecans) Optional, for crunch.

Method
 

Preparation
  1. In a large bowl, sprinkle the strawberry gelatin powder over 1 cup boiling water and stir gently until fully dissolved. Let sit at room temperature.
  2. Allow the dissolved gelatin to cool to room temperature to avoid cooking the dairy ingredients.
  3. In a blender, pulse the cottage cheese until smooth and uniform.
  4. Transfer the smooth cottage cheese into the bowl with the cooled gelatin and gently fold to combine.
  5. Fold the nondairy topping into the mixture gently to preserve air.
  6. Add the drained crushed pineapple and sliced strawberries, stirring gently to combine.
  7. If desired, fold in mini marshmallows or chopped nuts.
  8. Transfer into a serving dish and refrigerate for at least 2 hours until set.
  9. Before serving, garnish with additional sliced strawberries, a dollop of Cool Whip, or nuts.

Notes

For a firmer set, allow for the full 2 hours of chilling. Do not heat; this is a chilled dessert meant to be served cold. Variations include substituting fruits or adding nuts and honey for different flavors. Store in an airtight container for up to 3 days.
