Preparation
- In a large bowl, sprinkle the strawberry gelatin powder over 1 cup boiling water and stir gently until fully dissolved. Let sit at room temperature.
- Allow the dissolved gelatin to cool to room temperature to avoid cooking the dairy ingredients.
- In a blender, pulse the cottage cheese until smooth and uniform.
- Transfer the smooth cottage cheese into the bowl with the cooled gelatin and gently fold to combine.
- Fold the nondairy topping into the mixture gently to preserve air.
- Add the drained crushed pineapple and sliced strawberries, stirring gently to combine.
- If desired, fold in mini marshmallows or chopped nuts.
- Transfer into a serving dish and refrigerate for at least 2 hours until set.
- Before serving, garnish with additional sliced strawberries, a dollop of Cool Whip, or nuts.
Notes
For a firmer set, allow for the full 2 hours of chilling. Do not heat; this is a chilled dessert meant to be served cold. Variations include substituting fruits or adding nuts and honey for different flavors. Store in an airtight container for up to 3 days.
