For the crust

  • 1/2 teaspoon baking powder Helps the filling rise.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish, or line it with parchment.
  2. In a bowl, combine the flour and powdered sugar. Cut in the softened butter until crumbly. Press the mixture into the prepared dish.
  3. In another bowl, whisk the granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt until smooth. Pour this filling over the crust.
Baking
  1. Bake for 20–25 minutes, until the center is set and edges are golden. Cool completely in the pan.
  2. Chill for 30-60 minutes for clean slices. Dust with powdered sugar before serving.

Notes

For best results, use room temperature ingredients. Can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months. For variations, consider adding blueberries or using Meyer lemons.
