Ingredients
  

For the crust
  • 1 cup flour For gluten-free, substitute with gluten-free flour.
  • 1/2 cup powdered sugar
  • 1/2 cup butter (softened) Margarine can be used as a dairy-free substitute.
  • 1/4 teaspoon salt To enhance flavor.
For the filling
  • 16 oz cream cheese (softened) For a creamy texture.
  • 3 large egg yolks
  • 2 large whole eggs
  • 14 oz sweetened condensed milk For sweetness.
  • 1 teaspoon vanilla extract Or substitute with almond extract.
  • 1 tablespoon lemon zest Use fresh zest for best results.
  • 1/4 cup lemon juice For acidity.

Method
 

Preparation
  1. In a bowl, combine the flour, powdered sugar, and salt. Then, mix in the softened butter until the mixture resembles wet sand. Press this mixture into the bottom of a greased 9x9 inch baking pan.
Filling
  1. In a large mixing bowl, beat together the softened cream cheese and sweetened condensed milk until smooth. Add the egg yolks, whole eggs, vanilla extract, lemon zest, and lemon juice, mixing until everything is well combined and creamy.
Baking
  1. Pour the cream cheese mixture over the crust. Bake in a preheated oven at 325°F (165°C) for about 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
Cooling
  1. Once baked, allow the bars to cool to room temperature, then refrigerate for at least 2 hours to fully set.

Notes

For best results, chill the bars for at least 2 hours before cutting; warm bars can fall apart. Use parchment paper lining with overhang in your baking pan for easy lifting and cutting. A sharp knife wiped clean between each cut will ensure you have beautiful edges. Consider topping with fresh berries for added flavor.
