Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the oats, vanilla extract, baking powder, and salt to the bowl and mix well.
- Fold in dark chocolate chips or nuts if desired.
- Spoon dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool slightly on the baking sheet before transferring them to a wire rack.
Notes
Make sure the bananas are very ripe for the best sweetness and moisture. These cookies can be frozen and stored for later.
