  • 2 pieces ripe bananas Look for bananas with lots of brown spots for maximum flavor.
  • 1 cup oats For a gluten-free option, use certified gluten-free oats.
  • 1/2 cup dark chocolate chips or nuts Optional, but recommended for added flavor and crunch.
  • 1/2 teaspoon vanilla extract Enhances flavor.
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the oats, vanilla extract, baking powder, and salt to the bowl and mix well.
  4. Fold in dark chocolate chips or nuts if desired.
  5. Spoon dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes or until the edges are golden.
  2. Let the cookies cool slightly on the baking sheet before transferring them to a wire rack.

Notes

Make sure the bananas are very ripe for the best sweetness and moisture. These cookies can be frozen and stored for later.
