Ingredients
  

For the crust
  • 2 cups Graham crackers, crushed Can use gluten-free graham crackers for a gluten-free option.
  • 1/2 cup Butter, melted Makes the crust hold together nicely.
For the cheesecake filling
  • 16 oz Cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1/2 cup Sugar For sweetness in the filling.
  • 1 tsp Vanilla extract Add flavor to the cheesecake.
  • 2 cups Whipped cream Lightens the filling.
  • 1 cup Strawberries, chopped Fresh and ripe for the best flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Crush the graham crackers in a mixing bowl, then combine with melted butter until well mixed. Press this mixture into a lined baking pan.
  3. Bake the crust for 10 minutes until golden.
Mixing the Filling
  1. In a separate bowl, beat the cream cheese with sugar and vanilla until smooth and creamy.
  2. Gently fold in whipped cream and chopped strawberries into the cream cheese mixture until combined.
Assembly
  1. Pour the cheesecake mixture over the cooled crust and smooth it out evenly.
  2. Refrigerate for at least 4 hours to set.
Serving
  1. Once set, cut into bars and serve topped with extra strawberries.

Notes

Chill the bars for at least 4 hours or overnight for the best result. Consider lining the pan with parchment paper for easy removal. For a crowd, double the recipe.
