Preparation
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, combine the funfetti cake mix, vegetable oil, and eggs. Stir until a cohesive dough forms.
- Fold in the sprinkles and vanilla extract, mixing gently to avoid color bleeding.
Baking
- Use a tablespoon or cookie scoop to portion dough into tablespoon-sized balls and place them about 2 inches apart on the baking sheet.
- Bake for 8–10 minutes, watching for lightly golden edges and a set top. Be careful not to overbake for a softer cookie.
- Let the cookies cool on the baking sheet for 3–4 minutes before transferring them to a wire rack to cool completely.
Notes
Cookies can be stored in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator. For freezing, flash-freeze cookies and store in a freezer-safe bag for up to 3 months.
