  • 3 quarts fresh strawberries Choose ripe, fragrant berries for the best flavor.
  • 3/4 cup granulated sugar Reduce slightly for a tarter jam, but too little sugar will make it runny.
  • 1 tablespoon lemon juice Fresh-squeezed is best for flavor and natural pectin.

Preparation
  1. Combine the strawberries, sugar, and lemon juice in a large microwave-safe bowl.
  2. Halve or quarter very large berries so the pieces are roughly even. Stir gently to coat the fruit with sugar.
Microwave Cooking
  1. Cover the bowl loosely and microwave on high for 15 seconds.
  2. Stir the mixture to dissolve the sugar, then microwave on high uncovered for 5 minutes.
  3. Test doneness by spooning a little onto a spoon and chilling it in the freezer for 5 minutes.
  4. If it’s not set, microwave on high for another 5 minutes and repeat the spoon test.
  5. If desired, stir in more sugar, then cook for one final minute to finish.

Notes

Use the ripest berries for maximum flavor and color. If your microwave is powerful, reduce time slightly to avoid scorching. Skim foam before bottling for clarity. Store in sterilized jars in the fridge for up to 3 weeks or freeze for 6–12 months.
