Maceration Ingredients
  • 1/4 cup sugar For macerating strawberries.
  • 1 tablespoon all-purpose flour To mix with strawberries.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x9-inch or similar baking dish.
  2. In a large bowl, combine the sliced strawberries with 1/4 cup of sugar, the tablespoon of flour, and lemon juice. Let sit for 10 minutes.
Making the Batter
  1. In another bowl, whisk together the remaining flour, baking powder, salt, and remaining sugar. Stir in the melted butter and milk until smooth, then add vanilla if using.
Assembling the Cobbler
  1. Pour the batter into the greased dish and spread it to the edges. Spoon the strawberry mixture over the batter.
Baking
  1. Bake for 35-40 minutes, or until the top is golden brown and edges are bubbling. A toothpick inserted into the topping should come out with a few moist crumbs.
Cooling and Serving
  1. Let the cobbler cool for 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

For variations, you can substitute half the strawberries with other berries or peaches. Always let the cobbler rest 10-15 minutes before serving for cleaner slices.
