  • 1/2 teaspoon baking powder Evenly distribute among flour to prevent uneven rising.
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract Enhances sweetness and flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sweetened condensed milk until smooth and slightly pale.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In another bowl, combine the flour, baking powder, shredded coconut, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just blended.
  6. Drop spoonfuls of cookie dough onto a lined baking sheet, about 2 inches apart.
Baking
  1. Bake for 12–15 minutes or until the edges are lightly golden.
  2. Let cool slightly on the baking sheet before transferring to a wire rack.

Notes

Chill your baking sheet between batches if cookies brown too quickly on the bottom. Store cooled cookies in an airtight container in the refrigerator for up to 5 days.
