Ingredients
  

For the cookies
  • 1 cup unsalted butter, softened Use real unsalted butter for the cleanest flavor.

  • 1 cup brown sugar, packed Adds moisture and a molasses-like warmth.
  • 2 large eggs Adds structure and moisture.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder Provides the chocolate backbone.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Balances the flavors.
For the frosting
  • 1 cup chocolate frosting Use room temperature for easy spreading.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream butter and sugars until smooth in a large bowl.
  3. Add eggs one at a time, mixing until each is fully incorporated, then stir in vanilla.
  4. Combine flour, cocoa powder, baking soda, and salt in a separate bowl, then gradually add to the creamed mixture.
  5. Drop rounded tablespoons of dough onto ungreased cookie sheets, spaced about 2 inches apart.
Baking
  1. Bake for 10–12 minutes until edges are firm but centers are slightly soft.
  2. Let cookies cool on the sheets for one minute, then transfer to wire racks to cool completely.
Assembling
  1. Spread a generous amount of chocolate frosting on the flat side of one cookie and top with another cookie.
  2. Press gently to spread frosting to the edges.
Serving
  1. Arrange on a platter or pack into cellophane bags for gifting.

Notes

Chill the dough if your kitchen is warm to prevent excessive spreading. For chewier centers, remove cookies from the oven when they look slightly underbaked.
