Preparation
- In a mixing bowl, combine cottage cheese, natural peanut butter, honey or maple syrup, and vanilla extract. Mix until smooth.
- Gradually add powdered sugar and stir until fully incorporated, forming a thick mixture.
- Scoop the mixture into egg shapes and place on a parchment-lined baking sheet.
- Refrigerate for about 30 minutes to firm up.
Chocolate Coating
- While the eggs are chilling, melt chocolate chips with coconut oil until glossy and pourable.
- Dip each chilled egg into the melted chocolate until fully coated, tapping off excess.
- Before chocolate sets, add sprinkles or decoration if desired.
Setting
- Allow the chocolate to harden in the fridge for 15–20 minutes before serving.
Notes
Store in an airtight container in the fridge for up to 7 days. They can be frozen for 2-3 months. Thaw overnight in the fridge before serving.
