Preparation
- Grease a 9×13-inch baking dish with cooking spray.
- Pulse Circus Animal Cookies in a food processor until they’re a mix of fine crumbs and small pieces; reserve 1/2 cup of those pieces.
Melting
- In a large pot over low heat, melt the unsalted butter first, then add the mini marshmallows and stir constantly until fully melted and smooth.
Mixing
- Remove the pot from the heat and fold in the Rice Krispies cereal, the pulsed cookie crumbs (except the reserved 1/2 cup), and 2 tablespoons of both multi-colored nonpareils and colored sprinkles. Mix until evenly coated.
Setting
- Gently press the mixture into the prepared pan using a greased silicone spatula.
- Sprinkle the reserved cookie pieces across the top.
Drizzling
- Melt the white chocolate chips in two microwave-safe bowls and add heavy cream if desired.
- Drizzle plain white chocolate in one direction and pink chocolate in the opposite direction.
- Let cool until set.
Notes
Store at room temperature for up to 3 days or freeze individually for up to 2 months. Allow to thaw before serving. For variations, consider chocolate lover’s version or gluten-free substitutes.
