Preparation
- Preheat your oven to 350°F and line cookie sheets with parchment paper.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract and green food coloring.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
- Slowly add the dry ingredients to the wet mixture until just combined.
- Fold in 1 1/2 cups of M&Ms, saving the remaining to press on top after baking.
- Scoop 1 1/2 tablespoon portions of dough onto the lined tray, spaced 2 inches apart.
Baking
- Bake the cookies for 11-13 minutes, pressing remaining M&Ms onto warm tops.
- Cool the cookies completely on the cookie sheet.
Notes
For thicker cookies, chill the dough for 15-30 minutes. Store baked cookies in an airtight container for up to 7 days.
