- In a bowl, combine the Greek yogurt, cacao powder, and your chosen sweetener. Whisk until smooth and uniform.
- Taste the mixture and add more sweetener or cocoa to your preference.
- Line a baking tray with parchment paper, ensuring it lays flat.
- Pour the yogurt mixture onto the parchment and spread evenly to about 1/4 to 1/2 inch thickness.
- Drizzle peanut butter over the top and create swirls using a toothpick.
- Top with sliced strawberries, shredded coconut, and melted dark chocolate.
- Gently press the toppings into the yogurt.
- Freeze flat for 2-3 hours until solid.
- Remove from the freezer, peel off the parchment, and break into pieces.
Notes
Store bark in an airtight container in the freezer for up to 2 weeks. Thaw for 5-10 minutes before serving for a softer bite.
