Base Ingredients
  • 1 cup Greek yogurt (lactose-free if needed) Choose full-fat for richness.
  • 2-3 tablespoons cacao powder (or cocoa powder) Use unsweetened cacao for the best flavor.
  • 1-2 tablespoons maple syrup or honey (or stevia) Adjust for sweetness preference.
Optional Toppings
  • 1-2 tablespoons peanut butter Natural, smooth works best.
  • 2-3 pieces fresh strawberries, sliced
  • 1-2 tablespoons dark chocolate, melted

Preparation
  1. In a bowl, combine the Greek yogurt, cacao powder, and your chosen sweetener. Whisk until smooth and uniform.
  2. Taste the mixture and add more sweetener or cocoa to your preference.
  3. Line a baking tray with parchment paper, ensuring it lays flat.
  4. Pour the yogurt mixture onto the parchment and spread evenly to about 1/4 to 1/2 inch thickness.
  5. Drizzle peanut butter over the top and create swirls using a toothpick.
  6. Top with sliced strawberries, shredded coconut, and melted dark chocolate.
  7. Gently press the toppings into the yogurt.
  8. Freeze flat for 2-3 hours until solid.
  9. Remove from the freezer, peel off the parchment, and break into pieces.

Notes

Store bark in an airtight container in the freezer for up to 2 weeks. Thaw for 5-10 minutes before serving for a softer bite.
