  • 2 cups all-purpose flour Choose a mid-protein flour (around 10-11% protein) for best results.
  • 1 tbsp baking powder Fresh, active leaveners are crucial.
  • 1/2 tsp baking soda Fresh, active leaveners are crucial.
  • 1 tsp salt
Wet Ingredients
  • 1 cup buttermilk Use cultured buttermilk for best results.
  • 2 tbsp unsalted butter, melted
Main Ingredients
  • 1 cup sharp cheddar cheese, shredded Grate cheese from a block for best texture and flavor.
  • 1/4 cup fresh chives, chopped

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a Dutch oven or a baking sheet.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Stir in the shredded cheddar and chopped chives until coated in flour.
  4. Pour in the buttermilk and melted butter and mix until just combined.
  5. Turn the dough onto a lightly floured surface and knead gently just a few times.
  6. Shape the dough into a round loaf and place it on the prepared baking sheet or into the Dutch oven.
  7. Cut a deep cross on the top of the loaf.
Baking
  1. Bake for about 30–35 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped.
  2. Allow the loaf to cool slightly before slicing and serve warm with butter.

Notes

Wrap cooled bread tightly in plastic wrap or store in an airtight container; it lasts up to 3 days in the fridge.
