Preparation
- Preheat your oven to 350°F (175°C) and grease a standard 9×5-inch loaf pan lightly with butter or nonstick spray. Line the pan with a strip of parchment if desired.
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt until evenly combined.
- In another bowl, whisk granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until glossy and well blended.
- Gradually fold the dry ingredients into the wet ingredients and then fold in the grated carrots and optional nuts or raisins.
Baking and Cooling
- Pour the batter into the prepared loaf pan and smooth the top. Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Frosting
- Beat together the softened cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract, beating to a spreadable consistency.
- Frost the cooled loaf as desired.
Notes
For a lighter loaf, ensure all ingredients are at room temperature and avoid overmixing. Store the loaf in an airtight container for 3-4 days in the fridge.
