Ingredients
  

For the Cupcakes
  • 1 box chocolate cake mix Choose a brand you enjoy.
  • 3 large eggs At room temperature for best results.
  • 1/2 cup vegetable oil
  • 1 cup water
For the Topping
  • 1 can white frosting A smooth, stable frosting is recommended.
  • 2 cups coconut flakes For the bunny fur texture.
  • 1/2 cup mini chocolate chips For the eyes.
  • 1/2 cup pink candy melts or marshmallows For the nose.
  • 1/2 cup gummy candies For the ears.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, mix the chocolate cake mix, eggs, vegetable oil, and water until well combined.
  3. Fill the cupcake liners about 2/3 full with batter.
Baking
  1. Bake in the preheated oven for about 20 minutes or until a toothpick comes out clean.
  2. Let the cupcakes cool completely on a rack before decorating.
Decoration
  1. Frost each cupcake with white frosting evenly.
  2. Sprinkle coconut flakes on top for the bunny fur, pressing gently.
  3. Use mini chocolate chips for the eyes and place a pink candy melt or marshmallow for the nose.
  4. Insert gummy candies lightly into the frosting as ears.
Serving
  1. Arrange the Bunny Cupcakes on a platter and keep them cooled until serving.

Notes

Store frosted Bunny Cupcakes in an airtight container in the refrigerator for up to 3 days. Unfrosted cupcakes can be frozen for up to 3 months.
