Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, mix the graham cracker crumbs, brown sugar, and melted butter until combined. Press the mixture into the bottom of the prepared baking dish.
- In another bowl, beat the softened cream cheese, granulated sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust, smoothing it out evenly. Scatter the fresh blueberries on top.
- In a small bowl, mix more graham cracker crumbs with melted butter and a pinch of salt. Sprinkle this crumble over the blueberries.
Baking
- Bake for 30-35 minutes, or until set and lightly golden.
- Let the bars cool completely before slicing into squares.
Notes
Chill the bars for at least 2 hours before cutting for neat slices. Use a sharp knife wiped clean between cuts for pretty edges. You can also freeze them for up to 3 months.
