Ingredients
  

Crust
  • 2 cups graham cracker crumbs Or digestive biscuits for a twist
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
Filling
  • 1 package (8 oz) cream cheese, softened Use full-fat for best flavor
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries Thaw and drain if using frozen
  • 1/4 teaspoon salt
Crumble Topping
  • 1/2 cup graham cracker crumbs For topping
  • 2 tablespoons unsalted butter, melted
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, mix the graham cracker crumbs, brown sugar, and melted butter until combined. Press the mixture into the bottom of the prepared baking dish.
  3. In another bowl, beat the softened cream cheese, granulated sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust, smoothing it out evenly. Scatter the fresh blueberries on top.
  5. In a small bowl, mix more graham cracker crumbs with melted butter and a pinch of salt. Sprinkle this crumble over the blueberries.
Baking
  1. Bake for 30-35 minutes, or until set and lightly golden.
  2. Let the bars cool completely before slicing into squares.

Notes

Chill the bars for at least 2 hours before cutting for neat slices. Use a sharp knife wiped clean between cuts for pretty edges. You can also freeze them for up to 3 months.
